2 and 2/3 cups cooked quinoa
4 eggs, beaten
1/2 tsp salt
14 tsp lemon pepper
2 T chopped parsley
1/2 small onion chopped
1/3 cup fresh parmesan cheese, grated
3 cloves garlic, finely chopped
3/4 cup breadcrumbs
1/2 cup finely chopped carrots (or use whatever veggies you like)
oil for cooking
Combine quinoa, eggs, salt, and lemon pepper in a large bowl. Stir in parsley, onion, cheese,and garlicl. Stir in the bread crumbs and chopped veggies. Let the mixture sit for a few minutes so the crumbs absorb some of the moisture. Make into patties.
Heat oil in large skillet over med-low heat, add patties, cover and cook 7 - 10 minutes until the bottoms are deeply browned. Turn patties and cook the second side for 5 mins or until golden.
Serve plain or in a pita, on a salad or on a sandwich, with sliced avocado, hot sauce or the best way is with Berts' Awesome Mango Chutney!
We've tried cranberry chutney and blueberry but my favorite is the mango!
Uses for Chutneys!
Chutneys are traditionally served with curried foods. The sweet and tart flavor combined with a touch of spice compliments beef, pork, chicken or fish, or try any of the following for a new experience with our “awesome chutneys”. Mix with cream cheese, sour cream or crème fraiche for cracker spread or fruit dip. Mix chutney with a little olive oil and use it as a quick marinade or glaze for meats. Mix with homemade or packaged mayonnaise for accenting cold meats or poultry. Add our Cranberry Chutneys to turkey sandwiches or try our mango chutneys on chicken and veggie wraps. Serve our Apple Raisin with grilled pork tenderloin.
Spread triscuits with Apple Raisin chutney, add a thin slice of sharp cheddar cheese and heat in the microwave for just a few seconds or serve without heating.
